Recently, all the professions got new abilities that are not even covered here on this website, right? For example, the Mesmers have a skil called Conjure Nightmare that doesn't appear on this site. Because it's new, right?

My question is what website is currently the best one to get a complete and up to date skill listing for all professions?

Guildwiki.org should be pretty good. It's probably not 100% up to date either, though.
